In an attempt to eat a little healthier, I am trying to eat more oatmeal for breakfast. A simple change to the basic recipe made a great change of pace to my morning bowl. Call me crazy, but it almost tasted like eating a donut!
Oatmeal with Toasted Walnuts
1 cup old fashioned oats
2 cups water
1/2 cup roughly chopped walnuts
2 Tbl golden raisins (about)
1 Tbl Flax seed meal
1/4 cup coconut (I used Trader Joes Organic Unsweetened Coconut Chips)
Real maple syrup to drizzle, or brown sugar as desired
In saucepan, toast walnuts over med high heat, watching carefully so they do not burn. Add dry oatmeal and let toast briefly before adding water. Add golden raisins, flax seed meal, and coconut chips, lower heat to med low and cook until thickened, stirring regularly. To serve, drizzle with a bit of real maple syrup or brown sugar, add a little milk and some blueberries if you’ve got them.
